APPLE SPICE MUFFINS

 

1 1/2 cups flour

1/2 cup wheat germ

1/2 sugar, divided

1 tab. baking powder

1 1/4 tea. cinnamon, divided

1 cup peeled chopped apple

1 cup 2% low-fat milk

1/4 cup oil

1 egg

1/3 cup chopped nuts

2 tab. margarine, melted

 

     Combine flour, wheat germ, 1/4 cup sugar, baking powder and 3/4 tea. cinnamon; stir in apple.  Add liquid ingredients, mixing until just moistened.  Fill muffin cups.  Combine remaining 1/4 cup sugar, 1/2 tea. cinnamon and remaining ingredients.  Bake 400' for 20 to 25 min. or until golden brown.
