BLUEBERRY-CINNAMON MUFFINS
1¼ cups flour
½ cup uncooked Cream of Wheat Cereal
¼ cup sugar
1 tab. baking powder
2 tea. cinnamon
1 cup milk
¼ cup oil
1 egg, slightly beaten
1 tea. vanilla
1 cup fresh or frozen blueberries
1 small red delicious apple, peeled and small
sliced, opt.
In medium bowl, combine dry ingredients
and apples. In small bowl, using fork,
stir together liquid ingredients until just moistened; do not over mix. Gently stir in blueberries. Bake 400' for 25 min. or until toothpick
comes out clean. Serve warm. Makes 12 muffins.
BLUEBERRY OATMEAL MUFFINS
1 egg
2/3 cup buttermilk
½ brown sugar
1/3 cup oil
1 cup oatmeal, uncooked
½ tea. cinnamon
1½ cup flour
1 tea. baking powder
1½ tea. baking soda
1 cup blueberries, fresh or frozen, thawed and
drained
Beat egg, while stirring in buttermilk,
brown sugar, and oil. Add oatmeal,
flour cinnamon, baking powder and baking soda. Stir all ingredients just until
the flour is moistened. The batter
should be lumpy. Fold in blueberries,
gently. Bake 400' for 25 min. or until
nicely browned.
