NEW ENGLAND BROWN BREAD

 

1 cup flour

1 cup whole-wheat flour

¾ cup dark seedless raisins

¼ cup sugar

1¼ tea. baking soda

1¼ cups buttermilk or plain low-fat yogurt

¾ cup light molasses

1 large egg

 

     Grease 9" by 5" metal loaf pan.  In large bowl combine flours, raisins, sugar and baking soda.  Stir in buttermilk, molasses, and egg until batter is just mixed (batter should be very wet).  Pour into loaf pan.  Bake 350' for 55 to 60 min. until toothpick inserted in center comes out clean.  With spatula loosen bread from sides of pan.  Remove to wire rack to serve warm or cool completely to serve later.

 

SODA BREAD

 

2 cups flour

1 tea. baking powder

1/4 tea. salt

buttermilk

 

     Mix dry ingredients with enough buttermilk to make a soft dough.  Roll out 1/4 inch thick circle.  Cut into 4 pieces and dust the iron skillet with flour.  Cook in open skillet on medium heat for approximately 20 min.
