OLD-FASHIONED BRAN MUFFINS

 

1¼ cup Kellogg’s All-Bran

¾ cup milk

1 egg

¼ cup soft shortening

1 cup flour

2½ tea. baking powder

¼ cup sugar

¼ cup crushed pineapple, well drained

few raisins

 

     Combine All-Bran and milk; let stand until most of moisture is taken up.  Add egg and shortening; beat well.  Mix flour, baking powder and sugar.  Add to bran mixture, stirring only until combined.  If desired, add crushed pineapple and raisins.  Bake 400’ about 30 min.  Serve warm.

 

WHOLE-WHEAT MUFFINS

 

1 cup flour

1 cup whole-wheat flour

4 tea. baking powder

¼ cup sugar

1 cup milk

1 egg

¼ cup margarine, melted

 

 

     Mix dry ingredients.  Add liquid ingredients.  *Add one of the following:

1 small zucchini with juice squeezed out

blueberries and nutmeg

apples and cinnamon

cranberries

Bake 400' for 20 to 25 min.
