BUTTERMILK BISCUITS

 

2 cups flour or cake flour

1 tab. baking powder

½ tea. baking soda

5 tab. chilled solid vegetable shortening

1 cup buttermilk

 

     Sift flour, baking powder and baking soda. Cut the shortening into the flour until coarse crumbs form.  Add buttermilk, tossing with fork until dough forms.  Turn dough onto a lightly floured surface.  Gather into a disk.  Knead lightly a few times just until smooth.  (The dough can be made up to 2 hours ahead, wrapped in plastic wrap and refrigerated.)  Pat dough to ¾” thick.  Dip cutter in flour; cut out biscuits and place on ungreased baking sheet.  Repeat with trimmings.  Bake 425’ for 12 to 15 min.  Serve hot.  For speedier preparation cut into square-shaped.

 

OLD FASHIONED BAKING POWDER BISCUITS

 

2 cups flour

3 tea. baking powder

½ cup shortening or margarine

2/3 - 3/4 cup milk

2 tab. sugar

 

     Mix all dry ingredients together, cut shortening into mixture, add milk.  Immediately bake at 450' for 8-12 min.
