ENGLISH MUFFINS IN A LOAF

 

2 pkg. dry yeast

1/2 cup plus 2 tab. water

6 cups flour

1 tab. sugar

1 tea. salt

1 2/3 cups milk

cornmeal

1/3 cup oil

 

     Sprinkle yeast over water.  Heat milk and oil until just warm.  Combine dry ingredients.  Add milk and oil to dissolved yeast; then flour mixture to make a stiff batter.  Spoon into two 8 1/2 X 4 1/2" pans that have been greased and sprinkled with cornmeal.  Sprinkle tops with cornmeal.; cover.  Let rise in warm place for 45 min.  Bake at 400' for 25 min.  Remove from pans immediately and cool.  Orange or lemon rind or cinnamon or raisins can be added.

 

THREE HOUR BUN RECIPE Rhoades

 

1 qt. warm water

4 pkg. dry yeast

5 tab. shortening

5 tab. sugar

9 cups flour

2 tea. salt

 

     Mix with enough flour to stiffen.  Allow to rise in a warm place for ½ hour; punch down and let rise 1 hour.  Work out either in buns or cloverleaf rolls and let rise 1 hour in warm place.  Bake at 425' for 15 min. or until done and brown on top.
