WHOLE-GRAIN ORANGE BREAD

 

1 medium orange

1  3/4 cups whole-wheat flour

1  1/2 cups quick-cooking or old-fashioned oats

3/4 cup sugar

2 tea. baking powder

1 egg

1/2 cup skim milk

1/4 cup salad oil

 

     Grease 8 1/2" by 4 1/2" loaf pan.  From orange, grate 2 tea. peel.  Peel, section and seed orange; cut into 1" pieces.  In blender at medium speed, blend orange pieces until pureed, stopping to occasionally scrape container with rubber spatula.  Pour into 1-cup measuring cup to measure not more than 3/4 cup puree.

     In large bowl with fork, mix whole-wheat flour, oats, sugar, baking powder and orange peel.  In small bowl with fork, beat egg slightly, stir in milk, oil and puree.  Stir into flour mixture just until flour is moistened.  Pack batter firmly in pan.  Bake 350' for 50 to 60 min. or until toothpick inserted in center comes out clean.  Cool in pan on rack 10 min.; remove from pan and cool completely on rack.
