MANICOTTI

 

1½ cups flour

1½ cups plus 2 tab. water or milk  (I used ½ of each.)

4 or 5 eggs

 

     Beat with mixer until smooth.  Cook in small frying pan in butter or margarine.  Make like small pancakes.  This makes about 16.  For the filling use thickened fruit, a broccoli and cheese mixture or ricotta mixture.

 

RICOTTA

1½ lb. ricotta

2 small or 1 large egg

2 tab. parsley

2 tab. grated Parmesan Cheese

¼ tea. salt

 

BROCCOLI-HAM

 

1- 10 oz. pkg. frozen chopped broccoli

1 can condensed cream of mushroom soup

1- 6¾ oz. can chunked or ground ham

4 eggs

¼ cup water

½ cup sour cream for topping
