PRUNE BREAD

 

3/4 cups margarine

2 cups sugar

2 eggs

4 cups flour

2 tea. baking soda

1 tea. cinnamon

1 tea. cloves

2 cups prune juice, add water to make this amount

1 lb. prunes, cooked, pitted and cut

 

     Cook prunes the night before so they will be easier to pit.  Mix all ingredients in order except add prunes last.  Bake 1 hour at 350'.  Makes 4 small loaves or 2 bread sized loaves

 

CRANBERRY NUT BREAD

 

2 cups flour

1 cup sugar

1/2 tea. baking soda

1 1/2 tea. baking powder

2 tab. shortening

1 egg, beaten

1 orange

1/2 cup nuts

2 cups cranberries, cut in half

 

     Sift these first four ingredients in a bowl.  In another bowl, put 2 tab. melted shortening, 1 well beaten egg, and rind and juice of one orange.  Add water to orange juice to make 3/4 cup.

     Fold this mixture into first part; just enough to make all the flour mixture damp; then add nuts and cranberries; then remaining liquid.

     Bake in two small loaf pans at 350' for 50 to 60 min.  When doubling recipe bake for 70 to 80 min.
