POTTED BREAD

 

36 clay flower pots, No. 3 standard

1 lb., 2 2/3 oz. flour

2 lbs., 5 1/3 oz. high gluten flour

3 1/3 oz. wet yeast

8 oz. sugar

1 oz. salt

3 1/3 cups lukewarm water

1 cup half-and-half

1/3 oz. melted butter

2 eggs

 

     Mix all dry ingredients.  Mix all other ingredients until completely combined.  With a dough hook, mix together at low speed for 10 min.  Remove dough from the bowl.  Divide and shape into balls.  Place into prepared flower pots.*  Let rise until dough is about 2 inches above the edge of pot.  Bake at 350° in a preheated oven for about 30 min. or until bread is dark golden brown on top.  Check doneness by removing bread from pot to check the bottom.

     *To prepare pots: Place clean flower pots in corn oil in a deep fat fryer set at 350° for approximately 45 min.  Cool.  Spray with pan spray before each use.  Do not wash again.  Most pots are made by Ritter Clay Co.
