SPINACH RICOTTA PIZZA

 

½ cup tomato sauce

1 -10 oz. pkg. frozen chopped spinach

1 cup or more of shredded mozzarella cheese

2 tab. Parmesan cheese, grated

1 egg, beaten

1 tea. lemon juice

2 cloves garlic, cut fine

½ cup onion

¼ tea. pepper

dash nutmeg

10 slices bacon, cooked and crumbled

1- 4 oz. can sliced mushrooms, drained or fresh mushrooms

 

     Prepare dough for a 10X14” cookie sheet.  Grease pan..  Pinch up edges to hold sauce.

     Thaw spinach; drain and press out all moisture.  Sauté garlic, onion and fresh mushrooms.  Combine spinach, ricotta, ¼ cup mozzarella cheese, Parmesan cheese, egg, lemon juice, garlic, onion, pepper and nutmeg.  Spread lightly over top of pizza dough.  Add sauce; sprinkle with remaining mozzarella cheese and top with bacon and mushrooms.  Bake 425’ for 25 min.  or until crust is desired shade of brown.
