BANANA BREAD

 

1 ¾ cup flour (substitute ½ cup whole-wheat flour)

½ cup sugar

1 tea. baking powder

½ tea. soda

1 cup mashed, very ripe bananas (about 3 small)

1/3 cup unsweetened applesauce

2 large egg whites

1 large egg

¼ cup pecans, chopped

 

     Spray 9” by 5” metal loaf pan with nonstick cooking spray.  In large bowl, combine flour, sugar, baking powder and baking soda.  In medium bowl with fork mix mashed bananas, applesauce, egg whites and egg.  Stir into flour mixture just until moistened.  Spoon batter into loaf pan; sprinkle with chopped pecans.  Bake 350’ for  40 to 45 min. until toothpick inserted in center comes out clean with just a few moist crumbs attached.  Cool in pan on rack 10 min.  Remove loaf to wire rack.  *8 dried dates or dried apricots and ½ tea. cinnamon can be added.

 

BLUEBERRY APPLESAUCE BREAD

 

3 cups sifted flour                 2 eggs, well beaten      

1 cup granulated sugar    1 cup applesauce

1 tab. baking powder                        1/4 cup melted butter

1/2 tea. baking soda                 2 cups blueberries

1/2 ground mace                1/2 cup chopped dried apricots

 

     Mix flour, sugar, baking powder, soda and mace.  Mix eggs, applesauce and butter.  Add to dry ingredients and stir until well blended.  Fold in apricots and blueberries.  Pour into a greased 13"X4"X3" loaf  pan.  Bake 350' for 50 to 60 min.  Cool in pan for 10 min.; remove to wire rack.
