BUTTERMILK COFFEELOAF

 

1 cup whole wheat flour

1 ½ cups flour

½  cup Kellogg's All-Bran cereal

½ tea. baking powder

1 tea. baking soda

¼ tea. ground coriander or allspice

1 cup chopped golden delicious apples (do not pare)

¼ cup vegetable oil

¾ cup firmly packed brown sugar

1 egg

1 1/3 cups buttermilk

1 tea. grated lemon peel

 

     Stir together flours, cereal, baking powder, soda and coriander.  Toss apples with 1 tab. flour mixture; set aside.  In large mixing bowl, beat oil, sugar and egg until well combined.  Add buttermilk and lemon peel.  Beat well.  Add flour mixture, stirring just until moistened.  Fold in apples.  Spread in greased 9X5X3" loaf pan.  Bake 350' for 50 min. or until toothpick comes out clean.  Cool 10 min. Remove from pan.  Cool completely.  Leftover slices can be toasted.
