BUTTER CAKE WITH BROWNED BUTTER FROSTING

 

¾ cup sugar

¾ cup butter, softened

4 egg yolks

2 tea. vanilla

2 cups flour

2 tea. baking powder

1/8 tea. salt

¾ cup half-and-half

FROSTING

¼ cup butter

3 cups confectioners’ sugar

2 tea. vanilla

3 to 4 tab. milk

 

     In large mixing bowl combine sugar and ¾ cup butter.  Beat at medium speed, scraping bowl often, until creamy, 1 to 2 min.  Add egg yolks and vanilla; continue beating and scraping until well mixed, about 1 min.  Reduce speed to low; add flour, baking powder and salt alternately with half-and-half until well mixed, about 1 to 2 min.  Pour into 2 greased and floured 8” round cake pans.  Bake at 350’ for 20 to 25 min. or until toothpick comes out clean.  Cool 5 min.; remove from pans.  Cool completely.  For a 13X9” pan bake 25 to 30 min.  

     For frosting melt butter in a 1-quart saucepan over medium heat until lightly browned, about 4 to 5 min.  In small bowl combine all frosting ingredients except milk.  Beat at medium speed, gradually adding enough milk for desired spreading consistency.
