CHEESE CAKE

CRUST 

2 cups graham cracker crumbs

1 tab. butter, melted

1 tab. sugar

     Mix. together and line bottom of 11X14" pan or slightly larger (Wilton pan).

 

FILLING

3 - 8 oz. pkg. cream cheese

5 eggs

1 cup sugar

1/2 tea. vanilla

     Blend cream cheese in mixer until creamy, add sugar and then vanilla.  Add eggs, one at a time.  Drop filling by spoonfuls until bottom is covered.  Then pour remaining in gently so filling doesn't go under crust.  Bake 300' for l hour.  Remove from oven.  Put on topping, bake for 5 min.

TOPPING

1 1/2 pints sour cream

1/2 cup sugar

1 1/2 tea. vanilla

     Mix and spread gently on cake.  Bake 5 min. longer.  Cool slightly.  Cool in frig over night.

 

Caramel Topping With Chocolate

7 oz. (1/2 of a 14 oz. bag) caramels

1 cup whipping cream

     Combine caramels and cream in a small pan; stir over low heat until smooth.  Drizzle over cooled cake.

 

4 oz. chocolate

1 tea. butter

2 tab. whipping cream

     Combine and cook over low heat.  Drizzle over Caramel Topping
