CARROT CUPCAKES

 

2 eggs

1 cup sugar

½ cup vegetable oil

1 cup flour

1 tea. cinnamon

½ tea. baking soda

½ tea. baking powder

½ tea. ground allspice

1½ cups grated carrots

a cream cheese frosting recipe

¼  cup each, raisins, pecans & coconut, opt.

 

     Beat eggs, sugar and oil.  Combine flour, cinnamon, baking soda, baking powder and allspice; gradually add to egg mixture.  Stir in carrots. Fill muffin cups 2/3 full.  Bake at 325` for 20-25 min. or until toothpick comes out clean.  Cool 5 min. before removing from pan to wire rack.  Cool.  Make frosting adding the raisins, pecans and coconut.
