LADY FINGERS

 

½ cup (4) egg whites

¼ tea. cream of tartar

5 tab. sugar

2 egg yolks

1 tea. vanilla

1/8 tea salt

5 tab. sugar

1¼ cups flour

½ tea. baking powder

 

     Beat egg whites until frothy; sprinkle cream of tartar over top and beat.  Add 5 tab. sugar gradually; continue beating until meringue is stiff and peaked.  Beat together egg yolks, vanilla and salt until light.  Add 5 tab. sugar gradually; beat until thick.  Fold egg yolk mixture into egg white mixture.  Fold in flour and baking powder.  Use tip 32 from Mirro Cookie Pastry Press.  Fill press.  Holding press in semi-horizontal position, form 3” fingers on well greased cookie sheets.  Bake 450’ for 6 to 8 min.  Remove at once to racks.  Sift confectioners’ sugar over tops.  Yield 3 doz.
