PEACH CAKE

 

1 cup sugar

4 tab. oleo

1 egg

½ tea. vanilla

1 cup milk

2¼ cups flour

4 tea. baking powder

5 cups peaches for topping (13 peaches*)

1 cup sugar

½ cup boiling water or peach juice*

1 tea. cinnamon

     Add first seven ingredients in order.  Spread in 9x13" pan.  Add topping.  Bake 350' about 60 min.  Do not grease pan.  *Use ¼ cup or no boiling water with 13 peaches and bake 1 hr. and 30 to 40 min.

 

FRUIT COCKTAIL CAKE

 

2 cups flour

1½ cups sugar

2 tea. soda

sprinkle of salt

2 eggs

1 can fruit cocktail

 

     Beat well.  Bake at 325' for 40 to 50 min., depending on the size of the pan.

 

ICING

¾ stick margarine

1 to 2 cups coconut

½ cup canned milk

1 cup sugar

1 tea. vanilla

few nuts

 

     Bring to boil.  Boil for 2 min.  Cool.  Pour over layers.
