PINEAPPLE UPSIDE-DOWN CAKE  Chris Stanfanski

 

1 cup brown sugar

2 tab. butter

1 large can crushed or sliced pineapple

3 eggs

1½ cup sugar

1¼ cup flour

¼ tea. salt

1 tea. baking powder

1 tea. vanilla

 ½  cup cold water

 

     Drain pineapple; put on stove in 10” iron skillet with sugar and butter and let cook slow until butter is mixed.  Beat eggs and sugar until lemon colored.  Add remaining ingredients in order.  Pour batter over the pineapple mixture.  Bake about 1 hour or more at 350'.  Let set 5 to 10 min., then turn out on large plate.
