RHUBARB CAKE

 

2 1/4 cups flour

1 1/2 cups sugar

2 tea. baking powder

1/2 cup oil

2 eggs

2 tea. vanilla

1 cup buttermilk or sour milk ( 1 tab. vinegar & milk)

2 cups fresh rhubarb, diced

2 tea. cinnamon

dash of orange juice, opt.

     Mix rhubarb and 1/2 cup of sugar; let stand.  Mix well remaining cup of sugar and other ingredients.  Add rhubarb.  Pour into 9X13" pan.  Bake at 350' for 45 min. or till done.  Cool.

 

TOPPING

6 tab. margarine

1 cup coconut

2/3 cup brown sugar

1/4 cup milk

    Mix in pan; bring to and boil 2 min.  Cool slightly; pour over cake.
