LARGE BOILED RAISIN CAKE

 

1 lb. raisins                                                    4 cups flour                

1 cup sugar or brown sugar                             2 tea. baking soda

¼ tea. salt                                                      2 tea. cinnamon

3 cups cold water                                         1 tea. cloves

8 tab. shortening                                         1 tea. nutmeg 

 

     Boil raisins, sugar, salt, cold water and shortening for 15 min.; cool thoroughly.  Add rest of ingredients and mix well.  Add 1 cup of nuts or dried fruit, if desired.  Pour into a greased and floured 10” tube pan.  Bake at 350’ for 1 hour.  This makes a good Christmas cake.  It freezes well and may be decorated.  To half the recipe use a loaf pan.

 

BOILED RAISIN CAKE

 

2 cups raisins                                              2 tea. nutmeg

1½ cup brown sugar                                     2 tea. soda

1 cup butter                                          1 cup liquid from raisins            

2 eggs                                                   3 cups flour

2 tea. cinnamon                                    1 cup nuts

 

     Boil raisins in water.  Cream sugar and butter; add eggs and beat well.  Add spices.  Dissolve soda in raisin liquid and add.  Add flour; beat well.  Fold in raisins and nuts.  Bake in 9X13” pan at 350’ about 1 hour.  May dust top with confectioners’ sugar.
