WILTON’S  CHEESE CAKE

 

CRUST

1 cup flour

2 tab. sugar

½  tea. baking powder

1/3 cup butter or margarine

2-3 tab. milk

 

FILLING

1½ lb. or 3 pkg. cream cheese

1¼ cups sugar

5 eggs

1½ tea. vanilla

¾ tea. lemon rind

 

     Combine first 4 ingredients; blend together until crumbly.  Sprinkle milk over mixture; stir until dough is just moist enough to hold together.  Form dough into ball.  Press evenly over bottom and 2 ½" up sides of ungreased 9" Wilton Springform pan.  Chill.

     In large mixing bowl, beat together cream cheese and sugar until light and fluffy.  Add eggs, one at a time; beat thoroughly after each addition.  Add vanilla and lemon rind.  Blend until mixed.

     Pour into prepared crust and bake 350' for about 55 to 60 min., just until center is firm to touch.  Remove from oven and cool to room temp.  Chill until serving time.  Add fruit topping if desired.  Release sides of pan and leave on bottom to serve.
