WHOOPIE PIES

 

CHOCOLATE CAKES

½ cup shortening

1 cup brown sugar, packed

1 egg

¼ cup + 2 tab. baking cocoa

2 cups unbleached all-purpose flour

1 tea. baking powder

1 tea. baking soda

1 cup milk

1 tea. vanilla

FILLING

1 cup shortening

1 cup confectioners’ sugar

1 1/3 cups marshmallow cream

1½ tea. vanilla

 

     In a large mixing bowl, cream together the shortening, sugar and egg.  In a separate bowl, mix the cocoa, flour, baking powder, and baking soda.  Stir vanilla into the milk.  Add the dry ingredients to the shortening  alternately with the milk, beating till smooth.  Drop the dough by ¼ cupful onto parchment or lightly greased baking sheets, leaving about 2” between each.  Bake at 350’ for 15 min. or until they are firm to the touch.  Remove from oven and cool completely on wire rack.

     For filling; beat together shortening, sugar and marshmallow cream, then stir in the vanilla.  Spread half of the cakes with filling; top with remaining cakes.  Yield: about 9 whoopie pies.
