CHOCOLATE ZUCCHINI CAKE

 

1 cup packed brown sugar

½ cup white

½ cup margarine

½ cup vegetable oil

3 eggs

1 tea. vanilla

1 cup buttermilk

3 cups flour

1 tea. cinnamon

2¼ tea. baking soda

5 tab.  baking cocoa

2½ cup grated zucchini, peel if tough or older

½ cup chocolate morsels

½ cup raisins

½ cup chopped nuts

 

     Cream margarine and oil.  Add sugar and beat 5 to 7 min. until sugar is dissolved.  Add 3 eggs, one at a time.  Beat in buttermilk.  Add vanilla and beat well.  Sift all dry ingredients.  Add to butter mixture alternately with grated zucchini.  Fold in chocolate morsels, raisins and nuts.  Pour into 9x13" pan.  Bake 325' for 45 to 50 min.  Cool.  Frost with butter cream frosting.  Freezes well.

 

CHOCOLATE ZUCCHINI #2 Sue Guarino

 

½ cup margarine                     2½ cups flour

½ cup oil                                  4 tab. baking cocoa

1¾ cup sugar                            ½ tea baking powder

2 eggs                                      1 tea. soda

1 tea. vanilla                             ½ tea. cloves                          

½ cup sour milk                  ½ tea. cinnamon

2 cups grated zucchini            6 oz. pkg. chocolate chips

 

     Grease 9 X 13” pan.  Mix ingredients in order.  Pour in pan.  Sprinkle chocolate chips over batter.  Bake 350’ for 40 to 45 min.
