PEACHES  free stone, Red Haven

 

Peel and stone peaches.  Cut in half at crease.  Put them in a bowl of cold water and small amount of Fruit Fresh or lemon juice to prevent them from turning brown.  Make syrup of 2 cups sugar and 4 cups water.  Bring syrup to boil and boil two min.  Cook peaches a few min., turning once.  Place rounded side up in jars.  Add hot syrup to fill jar and remove air bubbles.  Process pints 15 min.

 

PEARS

    

     Use same method but use 1 cup sugar  and 5 cups water.

 

PLUMS

 

     Wash.  Prick all over with a needle.  Drop plums in boiling syrup of  2 cups sugar to 4 cups water (or 3 cups sugar to 4 cups water depending on tartness of fruit).  The plums should not be more than 2 deep in pan.  Remove pan from stove in 2 min. after adding fruit.  Let stand covered 20 to 30 min.  Pack plums into hot jars.  Cover with syrup and remove air bubbles.  Process 15 min. in boiling water bath.
