CHOCOLATE OATMEAL & COCONUT CHUNKIES

 

1 cup flaked coconut

1 8 oz. pkg. semisweet chocolate squares

1 cup shortening or butter-flavored shortening

1/2 cup packed light brown sugar

1/2 cup sugar

1 large egg

1 1/2 cups quick-cooking oats, uncooked

1 1/4 cups flour

1 tea. baking soda

1 tab. vanilla extract

3/4 tea. coconut extract

 

     In 10" skillet over medium-low heat, cook coconut until lightly toasted, shaking pan frequently. With knife, chop chocolate squares into 1/2" chunks. In large bowl, with mixer at low speed, beat shortening and sugar; then remaining ingredients except chocolate.  With wooden spoon, stir in chocolate. Drop level 1/4 cups dough, about 2" apart, on ungreased cookie sheet, pressing dough together lightly to form rounds. Bake at 350' for 15 to 20  min. until cookies are golden.
