FRUITCAKE COOKIES

 

¾ cup butter

¾ cup sugar

1 egg

2 tea. grated orange or lemon rind

2 cups flour

2½ cups flaked coconut

1 cup golden raisins

½ cup Maraschino Cherries, coarsely chopped

about 2 tab. cherry juice

 

     Cream butter in large bowl; add sugar and mix well.  Stir in egg and orange rind.  Add flour.  Stir in coconut, raisins, cherries and juice.  Form into balls or drop by teaspoon on greased cookie sheet.  Bake 350’ for 15 to 18 min.  Makes 40 cookies
