OATMEAL RAISIN COOKIES

 

1 cup margarine or butter

1 cup brown sugar

1/2 cup sugar

2 eggs

1 tea. vanilla

1 3/4 cups flour

1 tea. baking soda

1 tea. ground cinnamon

3 cups quick or old fashioned Quaker Oats

1 cup raisins

 

     Beat margarine and sugars until creamy.  Add eggs and vanilla.  Combine flour, baking soda and cinnamon; add to margarine mixture.  Stir in oats and raisins.  Drop by tablespoonfuls onto ungreased cookie sheet.  Bake 350' about 12 min. or until light golden brown.  Cool 1 min. on cookie sheet.  Cool completely and store in airtight container.  Makes about 4 dozen 2 1/2" cookies.

VARIATIONS;

Stir in 1 cup chopped nuts.

Substitute 1 cup semi-sweet chocolate morsels or candy coated chocolate pieces for raisins; omit cinnamon.

Substitute 1 cup diced dried mixed fruit for raisins.

Stir in 1 cup coconut.
