PRUNE BARS
1 cup pitted prunes
1 cup chopped walnuts
1 cup brown sugar, packed
3/4 cup flour
1 1/2 tea. baking powder
3 eggs, well beaten
confectioners sugar, opt.
Chop
prunes. Add to chopped nuts with brown
sugar, flour and baking powder
Mix. Fold into eggs. Spread in greased 9" square pan. Bake 325' for 25 to 30 min. Cool in pan 5 to 10 min. Cut into 24 pieces. Roll in confectioners sugar if desired.
LEMON COCONUT BARS
1 1/2 cups flour
1 cup firmly packed brown sugar
l pkg. lemon pie filling, the cook type
1/2 tea. nutmeg
1 cup butter or margarine, softened
2 eggs
1 cup coconut
Combine flour, brown sugar, pie filling mix and nutmeg in mixing
bowl. Add butter; cut in with pastry
blender or two knives until particles are fine. Separate 1 egg; add yolk and 1 whole egg to lemon mixture. Stir to blend. Pat or spread in ungreased 10X15" pan. Lightly beat egg white; brush over cookie
dough. Sprinkle with coconut. Bake 350' for 30 to 35 min., until golden
brown. Cool 10 min. before cutting into
bars. Makes 40 to 50 cookies.
