PIZZELLES

 

6 eggs

1½ cups sugar

1 cup margarine, melted and cooled*

1 tab. vanilla or 1 tea. lemon extract or 1½ tea anise oil

3½ cups flour

3 tea. baking powder

 

 

     Beat eggs, adding sugar gradually; beat until smooth.  Slowly add margarine and flavoring.  Add flour and baking powder.  Dough will be sticky enough to be dropped by spoon.  *Use margarine with the most amount of fat or use unsalted butter.

 

ORANGE-RUM PIZZELLES

 

3 eggs

1 cup sugar

½ cup unsalted butter, melted and cooled

2 tea. rum

2 tea. grated orange peel

2 cups flour

2 tea. baking powder

 

     Beat eggs and sugar.  Add cooled butter a little at a time.  Add rum and grated orange peel.  Gradually add baking powder and enough flour to make a very light dough, light enough to drop on electric baker with a spoon.  Makes approximately 50.
