MOUNTAIN COOKIES

 

1 cup butter (no substitutes), softened

1 cup confectioners’ sugar

2 tea. vanilla extract

2 cups flour

 

FILLING

1 pkg. (3 oz.) cream cheese, softened

1 cup confectioners’ sugar

2 tab. flour

1 tea. vanilla extract

˝ cup finely chopped pecans

˝ cup flaked coconut

 

TOPPING

˝ cup semisweet chocolate chips

2 tab. butter or margarine

2 tab. water

˝ cup confectioners’ sugar

 

     Cream butter, sugar and vanilla. Gradually add flour.  Shape into 1” balls; place 2” apart on ungreased baking sheets.  Make deep indentation in the center of each cookie.  Bake at 350' for 10-12 min. or until edges just start to brown.  Remove to wire rack and cool completely.  For the filling, beat cream cheese, sugar, flour and vanilla.  Add pecans and coconut; mix well.  Spoon ˝ tea. into each cookie.  For topping, heat chocolate chips, butter and water in a small saucepan until melted.  Stir in sugar.  Drizzle over cookies but not the fillings.
