HOT FUDGE PUDDING CAKE

 

1¼ cup granulated sugar, divided

1 cup flour

½ cup baking cocoa, divided

2 tea. baking powder

½ cup milk

1/3 cup butter or margarine

1½ tea. vanilla extract

½ cup packed light brown sugar

1¼ cup hot water

 

     Combine ¾ cup granulated sugar, flour, ¼ cup cocoa and baking powder.  Melt butter.  Add milk, butter and vanilla; beat until smooth.  Pour into ungreased 9” square baking pan.  Combine ½ cup granulated sugar, brown sugar and ¼ cup cocoa; sprinkle mixture evenly over batter.  Pour hot water over top.  Do not stir. 

     Bake at 350’ for 35 to 40 min. or until center is almost set.  Let stand 15 min.; spoon unto dessert dishes, spooning sauce from bottom of pan over top.  Garnish with whipped topping or ice cream. About 8 servings.
