RHUBARB-APPLE CRUMBLE

 

1/3 cup sugar

1 tab. cornstarch

2 tab. tapioca

1¼ pounds rhubarb, cut into ½” pieces (about 4 cups)

3 medium Golden Delicious apples, peeled, cored and cut into 1” pieces

½ cup packed brown sugar

2 tab. margarine or butter, softened

¼ tea. cinnamon

1/3 cup old-fashioned or quick-cooking oats

¼ cup flour

 

     In large bowl combine sugar, cornstarch and tapioca.  Add rhubarb and toss to coat.  Let stand 10 min. or longer.  Add apples to rhubarb.  Spoon fruit into 11” by 7” glass baking dish or shallow 2-quart casserole.  In medium bowl, mix brown sugar, butter and cinnamon until blended.  Stir in oats and flour until evenly combined.  Sprinkle topping evenly over fruit.  Bake 375’ for 45 min. or until filling is bubbly and browned.  Serve warm.  Makes 6 servings.
