EASY STEAMED PUDDING

 

1 1/4 cup brown sugar, packed

1 cup flour

1 tea. baking soda

2 tea cinnamon

1 tea. nutmeg

1 cup butter, softened

4 eggs

1 1/2 cup (1 med.) shredded raw potato

1 1/2 cup chopped dates

1 cup chopped walnuts

 

     In large mixer bowl combine brown sugar, flour, baking soda, cinnamon, nutmeg, butter and eggs.  Beat at med. speed scraping bowl often, until well blended (2 to 3 min.).  Stir in potato, dates and nuts (mixture may look slightly curdled).  Pour into greased 2 qt. round casserole; cover.  Bake 350' for 60 to 70 min. or until wooden pick inserted 2' from edge comes out clean.  Let stand 30 min. covered before serving.  If desired unmold onto serving plate. Serve warm with Egg Nog Hard Sauce.  Yield 12 servings.

 

EGG NOG HARD SAUCE

 

1 1/4 cup powdered sugar

1/2 cup butter, softened

2 tab. whipping cream

1 tab. brandy or 1/2 tea. brandy extract

 

     In small mixer bowl combine powdered sugar and butter.  Beat at med. speed, scraping bowl often, until light and fluffy.  Yield 1 1/3 cup.
