BAKED FISH

 

1 lb. frozen haddock fillets, thawed

1/3 cup flour

¼ tea. pepper

1 egg

2 tab. water

2/3 cup crushed cornflakes

1 tab. Parmesan cheese

1/8 tea. cayenne pepper

Tarter sauce, opt.

  

     Combine flour and pepper in a shallow dish.  In a second dish, beat egg and water.  In a third dish, combine cornflakes, cheese and cayenne.  Dredge fish in flour, then dip in egg mixture and coat with crumb mixture.  Place on baking sheet that has been coated with cooking spray.  Bake at 425° for 10-15 min. or until fish flakes easily with a fork.  Yield 4 servings.

 

SHIRLEY’S FISH

 

2 large pieces frozen flounder or fresh fish

1/3 cup mayonnaise

1/4 cup grated Parmesan Cheese

2 tab. dried bread crumbs

 

     Line 9"X13" pan with foil; grease foil.  Place fish, skin side down, in pan.  Cover with mayonnaise, sprinkle with bread crumbs then cheese.  Bake 375° for 25 min. or until brown.
