CREAMED CHICKEN AND BASIL

 

1½ lb. boneless, skinless chicken breasts, cubed

1 1/3 cups finely chopped green onions

1 lb. fresh mushrooms, sliced

2 tab. vegetable oil

½ cup butter or margarine

¼ cup flour

2 cups chicken broth

1 cup whipping cream

2 tab. minced fresh or 2 tea. dried basil

¼ tea. white pepper

hot cooked fettuccine

 

     Sauté chicken and onions in oil; add mushrooms later and continue until chicken is no longer pink.  Meanwhile, in large saucepan melt butter.  Stir in flour until smooth. 
Gradually add broth and cream.  Stir in basil and pepper.  Bring to a boil; cook and stir for 2 min. or until thickened.  Stir in chicken mixture.  Serve over fettuccine.
