RAVIOLI AND PEPPERS

 

2 medium sized red peppers

2 medium sized green peppers

2 medium sized yellow peppers

2 tab. olive or salad oil

1/2 tea. sugar

2 13-oz. packages frozen jumbo round cheese ravioli

14 to 15 1/2 oz. jar marinara sauce

8 oz. pkg. mozzarella cheese, thinly sliced

 

     About 1 1/2 hours before serving preheat broiler.  Cut each pepper into quarters; cut off stems and white membranes and discard seeds.  In jellyroll pan or  broiling pan without rack, toss peppers with oil, sprinkle of salt and sugar.  With rack at closest position broil peppers 15 min. until tender and browned, turning once.  Remove from oven.  Turn oven to 350'.  Prepare ravioli as directed.  Pour marinara sauce into 13"X9" baking dish.  Alternately arrange peppers, ravioli and cheese in sauce, overlapping slightly.  Cover with foil.  Bake 30 min. or until heated through and cheese melts.  Makes 8 main-dish servings.
