GREEN PASTA WITH SPINACH PESTO

 

1 lb. spinach, rinsed well, stems removed, cut into thin shreds

1 clove garlic

2 tab. pine nuts

½ cup grated Parmesan cheese

1 cup nonfat plain yogurt

1 tab. olive oil

1 lb. dry spinach noodles

½ cup minced red onion

1 cup radishes, thinly sliced

 

     Puree 1 cup of the shredded spinach, garlic, pine nuts, cheese, yogurt and olive oil in a blender.  Following package directions, cook noodles until barely tender to bite; drain well and place in a large, shallow serving bowl.  Pour pesto on noodles; sprinkle with remaining shredded spinach, onion and radishes.  Toss to mix.  Serves 6 to 8.
