WINTER SQUASH QUICHE

 

2 tab. chopped onion

2 tea. vegetable oil

2 cups (8 oz.) shredded Swiss cheese

1˝ cups milk

1 cup mashed cooked winter squash

3 eggs

1/8 tea. pepper

1/8 tea. ground nutmeg

     In skillet, sauté onion in oil until tender.  Transfer to a greased 9” pie plate  Sprinkle with cheese.  In a bowl, whisk milk, squash, eggs, pepper and nutmeg until smooth; pour over cheese.  Bake 325` for 50-60 min. or until a knife inserted near the center comes out clean.

*Add a tab. of Cream of Wheat or cornmeal to help thicken.)
