WINTER SQUASH QUICHE

tab. chopped onion

tea. vegetable oil

cups (8 oz.) shredded Swiss cheese

cups milk

cup mashed cooked winter squash

eggs

tea. pepper

tea. ground nutmeg

In skillet, sauté onion in oil until
tender. Transfer to a greased 9” pie
plate Sprinkle with cheese. In a bowl, whisk milk, squash, eggs, pepper
and nutmeg until smooth; pour over cheese.
Bake 325` for 50-60 min. or until a knife inserted near the center comes
out clean.
*Add
a tab. of Cream of Wheat or cornmeal to help thicken.)
