ZITI WITH CREAMY WALNUT SAUCE

 

1 lb. ziti pasta

½ cup reduced-fat or reduced fat ricotta cheese (not nonfat)

½ cup skim milk

½ cup toasted walnuts*

¼ cup nonfat sour cream

1 small clove garlic

2 tab. fresh basil leaves

2 tab. fresh parsley leaves

¼ tea. grated lemon rind

ground pepper

¼ cup fat-free chicken broth

6 tab. grated Parmesan or Romano cheese

 

  *Toast walnuts in a dry skillet over medium-high heat for 2 to 3 min. to intensify the flavor so you can  use less

     Cook pasta according to package directions.  Meanwhile, in blender, combine the ricotta, milk, walnuts, sour cream, garlic, basil, parsley and lemon rind.  Puree until smooth.  Season with pepper.  Heat chicken broth.  Drain pasta and place in serving bowl. Add broth and toss to coat.  Pour the sauce over pasta and mix well. Sprinkle with cheese.  Makes 6 servings.
