COCONUT PIE CRUST
1 cup flour
¾ cup coconut
6 tab. butter or margarine
2 tab. sugar
1 egg, separated
Mix
flour, coconut, butter, sugar and egg yolk.
With hands knead just until blended.
Preheat oven to 350’. Pat pastry
into pie plate or bottom and side of 10” pan with removable bottom. Prick pastry with fork. Bake 20 to 25 min. until golden. Beat egg white and quickly brush hot pie
shell. Cool in pan on wire rack.
VANILLA WAFER
CRUST
1 1/3 cups vanilla wafer crumbs
2 tab. sugar
5 tab. butter or margarine, melted
½ tea. vanilla
Combine
ingredients; press into bottom and sides of an ungreased 9” pie pan. Bake at 350° for 8 to 10 min. or until
crust just begins to brown. Cool. *Delicious with a cream pie topped with
blueberries or other fruit.
