PARADISE PUMPKIN PIE

 

9” unbaked pie shell

8 oz. pkg. Philadelphia Cream Cheese, softened

¼ cup sugar

½ tea. vanilla

1 egg

 

TOPPING

1¼ cups canned or cooked pumpkin

½ cup sugar

1 tea. cinnamon

¼ tea. ginger

¼ tea. nutmeg

dash of salt

1 cup evaporated milk

2 eggs, slightly beaten

 

     Combine cream cheese, sugar and vanilla, mixing until well blended.  Add egg; mix well.  Spread onto bottom of pie shell. 

     Combine remaining ingredients; mix well.  Carefully pour over cream cheese mixture.  Bake at 350’ for 1 hour and 5 min. or until done.  Cool.  Brush with maple syrup and garnish with nuts, if desired.
