FRUITY BAKED CHICKEN 

 

3 tab. margarine or butter

1/3 cup flour

1/2 tea. paprika

dash pepper

3 lb. fryer chicken, cut into pieces or chicken breasts, skinned 

1/4 tea. cinnamon

1/4 tea. nutmeg

1 tea. lemon juice

1 tab. honey or brown sugar

1 1/3 cups peaches or other fruit, drained

 

     Microwave margarine in 11X13" Pyrex dish.  In paper or plastic bag combine flour, paprika and pepper.  Shake chicken in flour mixture a few at a time.  Dip skin side down in margarine; place in Pyrex dish skin side up.  Combine remaining ingredients except peaches; pour over chicken.  Bake 375' for 50 min. basting occasionally with sauce.  Pour drained peaches over chicken; sprinkle with additional cinnamon if desired.  Continue baking 15 to 25 min.
