MEDITERRANEAN CHICKEN AND MUSHROOMS

 

½ pound mushrooms

3 pounds chicken parts

¼ cup flour

4 tab. oil

1 cup chopped onions

1 cup diced green pepper

1 clove garlic, finely minced

1 quart jar whole tomatoes

pinch salt

pinch ground red pepper

hot pepper seeds (optional)

1 cup brown rice

 

      Slice mushrooms and set aside.  Dredge chicken with flour, shake off excess.  Heat oil in 10" iron skillet.  Add chicken, a few pieces at a time and brown well.  Remove chicken.  To oil remaining in pan, add onions, green pepper and garlic and sauté for 3 min.  Add reserved mushrooms and sauté 5 min.  Stir in tomatoes, salt, red pepper, and hot pepper.  Bring to boiling.  Stir in rice.  Return chicken to top of pan.  Cover, reduce heat and simmer 1 hr. 10 min. or until chicken is tender.
