CHICKEN WALDORF SALAD
1/2 of
16-ounce pkg. rigate or penne macaroni
2 or 3 whole chicken breasts, skinned, deboned,
cooked
10 ounce package pitted dates or 3/4 cup raisins
2 large celery stalks
2 medium red delicious apples
1/2 cup walnuts
1 cup light mayonnaise or light whipped salad
dressing
1/2 cup milk
1/8 tea. pepper
lettuce leaves
In
saucepot, prepare macaroni as label directs; drain. Meanwhile, cut meat into
bite-size chunks. Cut each date in half; slice celery; cut apples into
bite-sized chunks; coarsely chop walnuts. In large bowl, with wire whisk or
fork, mix mayonnaise, milk, and pepper. Add macaroni, chicken, dates or
raisins, celery, and apples; toss to mix well. Serve chicken salad on lettuce
leaves and sprinkle with walnuts.
