SOUP IDEAS

 

To thicken soup without cream tear a slice of white bread into chunks, place in a bowl, and cover with the milk .  Let soak for 20 min. or so.  This can be pureed in blender with other ingredients.

 

Beans and bean puree are thickeners that provide flavor and protein.

 

Polenta which breaks down to a paste can be used as a thickener. 

 

Pesto can be added to soup at the table.

 

Roasted pepper puree can be used for flavor or garnish.

 

Roasted mushrooms add a dark, earth flavor to any hearty soup.
