ROASTED GARLIC

6 heads of garlic

2 tab. olive oil

salt and pepper to taste

 

     Remove the outer skins of the garlic heads and cut about 1/8 of tops off to expose the cloves.  Place the garlic heads cut sides up in a shallow, oven proof dish.  Drizzle the exposed cloves with the olive oil and season with salt and pepper.  Cover dish with aluminum foil.  Bake at 325’ for 1½ to 2 hours or until cloves are soft.  Remove from oven.  Spread the softened cloves on crackers or toasted bread or use them in other recipes.
