ORANGE SESAME BOK CHOY

 

1 medium orange

1 tab. vegetable oil

4 heads baby bok choy, cut lengthwise in half

1 tab. minced, peeled fresh ginger

1 garlic clove, minced

1 tea. soy sauce

1 tea. sesame seeds, toasted

 

     From orange, grate ½ tea. peel and squeeze ¼ cup juice.

     In deep nonstick 12” skillet, heat oil over medium-high heat until hot.  Add bok choy and cook 5 min. turning occasionally.  Add ginger, garlic and orange peel; cook 2 to 3 min. until bok choy is tender and lightly browned, turning occasionally.

     In small bowl mix soy sauce and orange juice; add to skillet and cook 30 seconds.  Transfer to bowl and sprinkle with sesame seeds.

     To use regular bok choy add stems with the ginger, garlic and orange peel; cook 4 min.  Add leaves and cook 2 min, stirring.
