PARSNIP PATTIES

 

1¼ pound parsnips, about 4 medium

2 tab. flour

dash of salt

dash of pepper

2 tab. margarine or butter, softened

1 tab. chopped onion

1 egg, beaten

dried bread crumbs or crackers

¼ cup oil or shortening

 

     Peel, slice and cook parsnips for 20 to 30 min.; drain.  Mash slightly.  Add to flour, salt, pepper, butter, onion and egg.  Form into patties and coat with crumbs.  Fry in oil, turning once after 5 min.
