SWEET AND SOUR RED CABBAGE

 

1 medium red cabbage, 1 1/2 to 2 lb.

2 tab. lemon juice or vinegar

4 slices bacon, diced

1/4 cup brown sugar, packed

2 tab. flour

1 1/2 cups water

1/4 cup vinegar

1/2 tea. salt

1/8 tea. pepper

1 small onion, sliced

 

     Wash and shred cabbage, enough to make 5 cups.  In saucepan bring salt, water and 2 tab. vinegar or juice to boiling.  Add cabbage; cover and heat to boiling.  Cook 5 min. or until tender (do not overcook).  Drain.  Fry bacon until crisp; drain.  Pour off all but 1 tab. of drippings.  Stir brown sugar and flour into drippings.  Add 1/2 cup water, 1/4 cup vinegar, pepper and onion.  Cook, stirring frequently until mixture thickens (about 5 min.).  Add bacon and sauce mixture to cabbage; stir together and heat thoroughly.  Can be garnished with additional diced bacon.  Makes 6 generous servings.
